so...can i modify a servo(to a 360 rotation) without a servo controller?

Yes, if you take out the pot and replace it with 2 2.5kohm resistors in series, with the middle point connected where the middle of the pot was and the the ends of the resistors connected where the sides of the pot were.

i just found this video from youtube... http://youtube.com/watch?v=CtLN8BoMIlQ he makes the servo to turn(by connecting it to a battery...) and then turns the pot until the motor stops... but how does it turn again when he reassembles everything?
