I kinda saw an article other day where a finger gripper gripping and lifting and egg without cracking or breaking it.
Post a link, if you want people to know what you're referring to.
I was wondering if someone could give me an insight on the technology used in this type of grippers.

There's several methods for controlling the amount of power to below the egg-breaking-point; force feedback via one of a number of sensors (cheap homemade or store bought expensive), "torque" control of the actuator with a preset maximum, sensors that detect when an object is slipping (to increase pressure to the point where it's not) etc.
But, if this is your first mechatronics project, I'd recommend a little less ambition - build something simpler and learn while you go.
