Does anyone know where I can get connectors and hosing to fit on the threads of 2-liter bottles? I can only find those little vortex in a bottle connectors, but those don't really help.

Hi,
Don't know if any's available (besides the vortex ones which might be cut to work), but why not just drill a hole and mount a hose connector yourself? (That's what I'd do).

Hmm, I guess I could do that. I suppose these fittings could handle up to 80psi?

pends on how well u cut the hole and what connector u use

As they're used with air compressors up to more than 350psi, the fittings should not be a problem.
A "rubber" gasket on either side and perhaps a suitable shim/disc to give it more hold on either side as well, will make sure either the bottle or the treads of the capsule, will be the first to give in.
