Hey. I have a spare 16mhz crystal from my standalone arduino project, can I attach it to a ATmega8 microcontroller?

First off, not all ATmega8 microcontrollers are created equal. There are different speed ratings for the ATmega 8. They range from 4 MHz to 20 MHz.

Second - you need to set fuse settings in the ATmega8 that allow the part to drive the crystal.
