Is there any instructions on step-by-step to make your own omni-directional robot camera starting with chips and servos?

In addition to apparatus for omnivision, I also want to know how to make the camera starting with the chip, lens, and whatever other parts you need to make a robot camera from scratch.

Sorry, but I think that would be a big waste of time.

You need to start with a camera module that has a removeable / replaceable lens.  This would be a reasonable starting point -

If you find a suitable lens that might work with the AA-format boards, let me know - I would be interested.

they have lens that are optional for the boards. Did you see that in the specs? What is the cost of the board? This company is in Hong Kong based on the URL. Do they have a distributor in the US?

Yes, but they do not have omnidirectional lens (as far as I know).  I have worked with this company.  They also have a reseller in the US for some of their cameras -
