Mountain Bed and Breakfast---Off the Grid

My girlfriend and I are building a Bed and Breakfast on a mountain in Tx. We are fully off the grid. I made solar panels, and we have a water catchment system. It was built with recycled materials that we got from craigslist, along with natural stone from our property. I see alot of interesting ideas on here about energy. We plan on adding a wind generator in the future. Does anyone have experience with off the grid living? any tips?
