hmmm... Does anyone have any resources for dealing with 1/4" audio signal?  Like what you get from a guitar, or a drumkit.  I can't find anything

YOu need to amplify signal from your guitar/drum, so signal level would be from 0 to 5V(given your MCU is 5V driven) (something like that:
Than you just connect output from amplifier to ADC input of your MCU. And that's all =)
But, most MCUs (like AVR, PIC and so on) are to slow to do realtime audio signal processing. Thes don't have floating point operation instructions, ow RAM size and stuff...
But you would be still able to transfer signal to your PC and look at it, and lots of other funny stuff. For example, I used circuit like that as oscilloscope not that long ago:
