Saw this in my email today, looks useful:

I've never needed to do a stencil, my prototypes are usually just two or three units, so easier to just solder by hand . . .

A tutorial on etching your own brass stencil.
Metal stencils are better than plastic types as they don't warp or bend as easily, allowing you to do finer pitch components more reliably.
