I haven't worked with bluetooth designs yet, but if I were to attack this problem I would break it up into three parts.

1. Stepper motor control.  Get the stepper motor to work properly.
2. Voice commands.  Get voice commands to work properly.
3. Bluetooth.  Get bluetooth working as a direct cable replacement.

Is there a particular part you are having trouble with?

As of now I'm having trouble finding a voice command program that will allow me to communicate with the stepper motor. Any thoughts? :-\
