Title: Already built robots

I am looking for an outlet to use my knowledge of MCU and embedded C++. I thought about building a robot, but I think I want to jump straight to writing the code. Any ideas on a preassembled robot that I can just program or maybe even pick out the type of MCU I would want. (though this would require much careful planning with pins and what not)

Try perhaps the Pololu 3Pi robot?  It's quite well designed and has a number of high-quality parts you can cannibalize for when you want to build a robot yourself

I was also thinking of suggesting the 3Pi as a nice starting base that is very reasonably priced.
