So, I'm a beginner at building a robot and I just bought my first transmitter and receiver set. I lit. just received it in the mail and reading through the manual discovered that it should be used for R/C airplanes. I was wondering, is there anyway I could adjust it so it does not operate for an airplane or should I just return the set?

By FCC regulations the frequencies of 72.xxx MHz are for aircraft only whereas the frequencies of 75.xxx MHz are for ground vehicles. This is for safety so you don't 'shoot down' a model airplane that can cause damage.
If the transmitter and receiver has the option to change XTALs and can accept that great of a frequency change then you could buy a 75.xxx MHz XTALs. Most likely this isn't an option.
Since the radio is brand new call or email the store to exchange it for the correct one.
