Title: Servo Vs Stepper: Small scale

Would it be better to use a servo or stepper when the application uses either a servo about this size (http://www.sparkfun.com/products/9065 (http://www.sparkfun.com/products/9065)) or a stepper motor about this size (http://www.jameco.com/webapp/wcs/stores/servlet/Product_10001_10001_171601_-1 (http://www.jameco.com/webapp/wcs/stores/servlet/Product_10001_10001_171601_-1))

I'm building a few servo valves and I need a small motor to drive them
