Dear All,
I've never had an experience in controlling some movements nor heard about AVR before. However, I need to have control of some stuff in my experiments. I wanna control a flat plate pitching up and down (+ or - 15 degrees) in 3 Hz. I've found ATmega128, servo motor and AVR in my lab but I've no idea where I should start. Can anyone give me some guidance ?

You didn't comment on the size of the plate?
If the plate can be hinged at one side, a simple DC motor (perhaps a small gear head motor) with a cam could be used - i.e. no microcontroller and no servo at all, just a motor with an output shaft going 180 RPM (= 3 revs per second).
