I am looking to power a 6-7.4V servo off of a 12V DC Marine battery. The servo is the HS-5685MH.
The stall current is, at most, 3A.
What is the best way to regulate these?
I am currently looking at using a mosfet with PWM at the gate with peak 5V, source at ground, and servo connected to the drain and 12V battery. Also, a flyback diode in series with the servo.

What the RC hobby people do for this is to get a 6.0 - 7.4 V UBEC and power the servo off that, the UBEC off the battery. An UBEC is really just a switching voltage converter.
You can find 7.2V / 3A UBECs for < $10 from the various cheap hobby sources, and probably would pay up to $20 from the highest-end brands/stores.
