how to define the coefficients Kp, Ki and Kd of a PID without knowing the characteristics of my dc motor

You can't.
You can either take a first guess at the values one at a time or model that entire motor/feedback SYSTEM to calculate starting values.
Look up PID tuning. There are many articles on how to do this.
